This vegan sausage recipe combines beans, onions, garlic, nuts, oatmeal and numerous spices to make a delicious vegetarian sausage. This hearty, healthy and incredibly tasty sausage is easy to make at home.

Ingredients
  

  • 3 tablespoons chia seeds
  • 60 ml water
  • 270 g white beans or canned red beans
  • ¹⁄₂ onion medium size
  • 3 cloves garlic
  • 90 g oat flakes
  • 60 g walnuts
  • 1 tablespoon tomato paste
  • 1¹⁄₂ tbsp soy sauce
  • 2 tsp onions dried
  • 2 tsp paprika
  • 1 tsp herb Italian, mix
  • ¾ tsp salt
  • ¹⁄₂ tsp cumin powder
  • 1 pinch cayenne pepper
  • Black pepper to taste
  • ¹⁄₂ tsp fennel seeds to taste
  • 2-3 drops liquid smoke

Instructions
 

  • Grind chia seeds in a coffee grinder.
  • Mix in a bowl with 60 ml water.
  • Allow to swell for approx. 5 minutes.
  • Rinse the beans thoroughly in a sieve.
  • Drain well.
  • Pat dry with a paper towel.
  • Peel and finely chop onion and garlic.
  • Finely chop oatmeal and walnuts in a food processor.
  • Do not run the food processor continuously so that the ingredients do not become "flour".
  • Add all remaining ingredients to the food processor. Again, do not run the food processor continuously to blend the ingredients.
  • Use your hands to form about 6-7 sausages from the resulting mixture.
  • If the mixture is too sticky, just add some oat flour.
  • Place the vegan sausages on a plate lined with baking paper.
  • Place in refrigerator for about 20 minutes to cool.
  • Wrap the vegan sausages individually in baking paper and aluminum foil and twist the ends in.
  • Place the sausages in a steamer.
  • Cover and steam for about 35 minutes.
  • You can serve the sausages immediately after cooking.
  • You can also fry them in a skillet or on a grill.
  • Before frying, brush the sausages with oil on all sides and then place them in the preheated pan.
  • Fry for about 7-10 minutes, turning constantly, until golden brown and crispy.
  • Before grilling, cool the sausages first to room temperature and then in the refrigerator; they will hold their shape better that way.
  • Serve the vegan sausages with fresh salad.

Notes

The vegan sausages taste delicious anywhere you would use any other sausage. For example, you can make a vegan hot dog with this sausage, fry it on a grill or in a pan, serve it with mashed potatoes or other side dishes.
