Quick and delicious curd casserole with apples is easy to prepare. Quark casserole is low in fat and high in protein and can be served for breakfast or as a dessert.

  • 2 apples
  • 2 tsp syrup applePeel and finely dice apples.

    Mix with 1 tsp apple syrup and lemon zest.

    Place everything in a baking dish.

    Crumble wholemeal rusk and sprinkle on apples.

    Separate the egg.

    Mix egg yolk, 1 tsp apple syrup, raisins to taste, low-fat curd cheese and spelt flour.

    Let stand briefly to swell.

    Beat egg whites with salt until stiff.

    Fold the beaten egg whites into the quark mixture and spread on the apples.

    Bake the apple curd casserole in a hot oven at 180 °C for about 20 minutes until golden brown.

    Before serving, sprinkle with a little powdered sugar and enjoy warm.

  • 200 g low-fat quark
  • 1 tbsp. spelt flour
  • Raisins to taste


The casserole tastes warm but also cold! It is best served with a delicious berry sauce or vanilla sauce.
The casserole keeps well in the refrigerator for up to three days, but it is no longer so fluffy.
