Ingredients
  

  • 4 zucchini
  • 1 carrot
  • 1 onion
  • 2 to matoes
  • 600 g minced chicken
  • ½ cup quinoa
  • 50 g shepherd's cheese
  • salt to taste
  • pepper to taste
  • 3-4 sprigs of thyme
  • 2 tablespoons vegetable oil

Instructions
 

  • Rinse the quinoa with cold water.
  • Put the quinoa in a pot, pour water in a ratio of 1: 2.
  • Bring to a boil, reduce heat and cook under a closed lid for about 20 minutes.
  • Let the quinoa cool down.
  • Preheat the oven to 180 degrees.
  • Wash the zucchini, cut in half and remove the pulp with a tablespoon.
  • Do not discard the pulp.
  • Finely chop the onion, carrots and zucchini pulp.
  • Cut the tomatoes into small cubes.
  • In a large pot, heat a little oil and fry the onions.
  • Add the carrots and zucchini pulp.
  • Fry everything well.
  • Add the minced meat and stir-fry for about 10-15 minutes.
  • Add the tomatoes and fry over high heat until almost all the liquid has evaporated. Season with salt and pepper.
  • Add thyme leaves.
  • Stir in quinoa and heat together for a few minutes.
  • Fill the zucchini with the mixture.
  • Place the zucchini in an ovenproof dish.
  • Sprinkle with finely grated cheese.
  • Bake stuffed zucchini for about 30-40 minutes, until a delicious golden crust forms.
