This recipe of stuffed mushrooms is unusual and very tasty. Spicy herbs, aromatic eggplant and crunchy walnuts give this simple vegetable dish an interesting flavor and rich aroma.

Ingredients
  

  • 20 mushrooms large
  • 1 eggplant
  • salt to taste
  • 4 tablespoons vegetable oil
  • 50 g walnuts
  • 2-3 stalks parsley
  • 2-3 stalks basil
  • 40 g cheese
  • Black pepper to taste

Instructions
 

  • Separate mushroom stems from caps.
  • Peel the eggplant.
  • Cut mushroom stems and eggplant into small cubes with a knife.
  • Sprinkle eggplant with a tablespoon of salt in a bowl and let sit for 15 minutes.
  • Then rinse the vegetables under cold water and squeeze out the water.
  • Preheat the oven to 180°C.
  • Line a baking tray with baking paper.
  • Heat the oil in a pan.
  • Fry the eggplants in it for 6-8 minutes until golden brown.
  • Add the mushroom stems to the pan as well.
  • Stir the whole thing and sauté for another 3-4 minutes.
  • Finely chop the walnuts, parsley and basil.
  • Finely grate the cheese.
  • Mix the sautéed vegetables with nuts, herbs and cheese well in a bowl.
  • Season the filling with salt and pepper.
  • Place the mushroom caps on the prepared baking sheet.
  • Divide the filling among the mushrooms.
  • Cook the stuffed mushrooms in the oven for 20 minutes.
