Delicious and appetizing finger food made of eggplant with light filling of cottage cheese, with crunchy walnuts and aromatic coriander. The stuffed eggplants are perfect for a barbecue party.

Ingredients
  

  • 2 eggplants
  • Salt to taste
  • 4 tablespoons vegetable oil
  • 150-200 g cottage cheese
  • Coriander to taste
  • 50 g walnuts
  • 1-2 cloves garlic
  • 1-2 tablespoons sour cream

Instructions
 

  • Cut the eggplants lengthwise into thin slices.
  • Sprinkle with salt and let stand for 5 minutes.
  • Then pat dry with paper towels.
  • Fry the eggplant slices in a pan with oil for a few minutes on each side until soft.
  • Transfer the finished fried eggplant slices to paper towels to degrease and let cool.
  • Mix cottage cheese with chopped cilantro, chopped nuts and garlic in a bowl.
  • Mix with sour cream and season with salt.
  • Place cheese filling on each eggplant slice and wrap in a tight roll.

Notes

As an alternative to frying in a pan, the eggplants can also be baked in the oven or on the grill.
