A combination of chocolate and cheesecake - Russian pluck cake, the popular classic! The creamy cheese filling and delicious chocolate sprinkles are just perfect in this cheesecake, it tastes super delicious with the crumbly chocolate dough.

  • 200 g butter
  • 150 g sugar
  • 1 egg
  • 350 g flour
  • 1 package Baking powder
  • 40 g cocoa powder


  • 180 g butter soft
  • 200 g sugar
  • 4 eggs
  • 500 g low fat quark
  • 1 package Vanilla sugar
  • lemon peel optional
  • 1 package Vanilla pudding powder or 20 g cornstarch


Prepare shortcrust pastry

  • Beat butter, sugar and egg until creamy.
  • Mix flour, baking powder and cocoa and knead into the dough.
  • Press 2/3 of the dough into a springform pan and raise a rim. Set aside the remaining dough for the pluck pattern.
  • Place the prepared springform pan in the refrigerator.


  • Cream butter, sugar and the eggs until light and fluffy.
  • Add the quark, cornstarch or custard powder, vanilla sugar and grated lemon zest and mix until evenly combined.
  • Spread the curd mixture over the base.
  • Tear remaining dough over filling ( In circles or as coarse crumbles ).
  • Bake the cake in a preheated oven at 175 degrees for 50 minutes.
  • Serve Russian pluck cake cooled!


For a fruity note provide tangerines, peaches, blackberries, blueberries or cherries!
Do not bake the pluck cake too hot - otherwise the curd mass will rise too much and collapse again later!
