A vegetarian casserole of summer vegetables tastes so easy and incredibly delicious. Ratatouille is easy to prepare, it consists of zucchini, eggplant and tomatoes.

Ingredients
  

  • 1 zucchini light
  • 1 eggplant
  • 3 to matoes
  • 100-150 g cheese e.g. mozzarella
  • 1-2 tablespoons olive oil
  • 1 clove garlic
  • salt to taste
  • pepper to taste
  • Thyme to taste

Instructions
 

  • Peel the garlic cloves and put them through the garlic press.
  • Mix garlic with about 2 tablespoons olive oil in a small bowl.
  • Cut vegetables into slices, season with salt and pepper.
  • Place the vegetable slices alternately one after the other in a baking dish.
  • Place a sprig of thyme on top.
  • Drizzle with the mixed garlic oil.
  • Bake ratatouille in an oven preheated to 220 degrees for about 15 minutes.
  • Grate the cheese on a coarse grater.
  • Sprinkle the ratatouille with the cheese and bake for another 5-10 minutes.
