Ingredients
  

Muffins

  • 115 g butter soft
  • 125 g sugar
  • 1 package Vanilla sugar
  • 1-2 tsp orange zest
  • 1 pinch salt
  • 2 eggs
  • 50 g cream cheese
  • 150 g flour
  • 10 g cornflour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Frosting

  • 100 g butter room temperature
  • 100 g icing sugar
  • 250 g cream cheese room temperature
  • 4-5 tbsp lemon room temperature

Topping

  • 1 tsp orange zest
  • 1-2 stalks mint

Instructions
 

Muffin batter

  • Line a muffin tin with paper cases.
  • Preheat the oven to 180 degrees (top and bottom heat).
  • Cream the soft butter with the sugar, vanilla sugar, salt and orange zest.
  • Stir in the eggs.
  • Stir in the cream cheese.
  • Stir in the flour, baking powder and baking soda and mix until smooth.
  • Divide the batter into the cups of the muffin tin.
  • Bake the muffins in the oven for 20 minutes until light brown.
  • Leave to cool completely on a rack.

Frosting

  • Cream the butter with the icing sugar for about 3-5 minutes.
  • Stir in the lemon curd and add the cream cheese by the tablespoonful, but do not over-stir.
  • Place the frosting in the fridge for 30 minutes.
  • Place the frosting in a piping bag and pipe onto the cupcakes with a tuff.
  • Decorate with fresh orange zest and mint and enjoy the cupcakes.
