A nutritious, delicious and spicy soup with meat and vegetables. The special feature of this soup is the lemon juice, which is added to the soup at the end of the cooking time and makes it so unique.

Ingredients
  

  • 500 g pork
  • 1 celery root
  • 2 l water
  • 1-2 onions
  • 1 bell bell pepper
  • 1-2 stalks celery
  • 1 parsnip
  • 1 carrot
  • 1-2 tablespoons vegetable oil
  • 100-120 g rice
  • 180 ml sour cream
  • 1 tablespoon flour
  • lemons
  • 1 tablespoon tarragon dried
  • Salt to taste
  • Black pepper to taste
  • Herbs to taste

Instructions
 

  • Cut the pork into pieces of about 2½ cm.
  • Cut the celery root in half.
  • Place the meat in a saucepan with the halved celery root.
  • Pour in cold water, bring to a boil and simmer over medium heat for about 45 minutes.
  • Periodically skim off the foam that forms on the surface.
  • Cut onion, bell bell pepper and celery into small pieces.
  • Grate parsnip and carrot on a coarse grater.
  • Sauté everything in a pan with oil for 8-10 minutes.
  • Add the sautéed vegetables and rice to the soup.
  • Bring to a boil, reduce heat to minimum and cook for another 20-25 minutes.
  • Remove the celery bulb from the soup.
  • Mix the sour cream with the flour and a few spoonfuls of broth from the pot.
  • Pour into the soup in a thin stream, stirring constantly.
  • Squeeze the juice of one lemon and add it to the pot along with the tarragon, salt and black pepper.
  • Cook the soup for another 10 minutes.
  • Sprinkle with chopped herbs before serving.
