Zucchini lasagna is prepared without dough and is therefore low in calories and super healthy. The zucchini are layered in strips together with ricotta, mozzarella and tomato sauce and baked in the oven with cheese.

  • 4 zucchini
  • Salt to taste
  • 350 g ricotta
  • 1 egg
  • ¹⁄₄ tsp pepper
  • 3 cloves garlic
  • 4 stalks basil
  • 60 g parmesan
  • 700-800 g tomato sauce
  • 300-350 g mozzarella


  • Cut the zucchini lengthwise into thin strips.
  • Place the zucchini strips in a single layer on paper towels.
  • Sprinkle with salt and let sit for 10 minutes.
  • Then pat dry with dry paper towels.
  • Mix ricotta, egg, pepper, minced garlic, chopped basil and half of the grated Parmesan.
  • Lightly coat the bottom of the baking dish with the tomato sauce.
  • Place the ingredients in the dish in several layers: Zucchini, ricotta mixture, grated mozzarella, layering the last and thus the top layer with zucchini.
  • Spread with tomato sauce, cover with mozzarella and the second half Parmesan.
  • Bake the zucchini lasagna at 180 ° C for about 40 minutes, until the cheese turns brown.
