  • 250 g butter cold
  • 400 g flour
  • 1 tsp salt
  • 130 ml water cold
  • 600 g pumpkin
  • 1-2 apples
  • 1 lemon
  • ½ tsp cinnamon
  • 1 package Vanilla sugar
  • 150 g condensed milk
  • 1 tbsp. cornstarch
  • 1 egg


  • Mix the butter with the flour in a food processor.
  • Add salt and ice water and mix to a uniform dough.
  • Separate ⅓ of the dough, separately wrap two pieces of dough in plastic wrap.
  • Place in the refrigerator for 20 to 30 minutes.
  • Remove the seeds from the pumpkin and cut into small pieces or grate on a grater together with the apples.
  • Grate the lemon peel and squeeze the lemon juice from half a lemon.
  • Add the lemon juice and zest to the apple and pumpkin mixture.
  • Sprinkle with cinnamon and vanilla sugar and stir.
  • Add condensed milk and starch and mix.
  • Roll out the larger piece of dough until thin.
  • Place the dough in a springform pan, pull the edges up a bit and press the dough down lightly.
  • Spread the apple-pumpkin mixture on the dough base.
  • Roll out the second piece of dough and cut it into narrow strips.
  • Lay the dough strips on top of the filling like a net.
  • Cut off the excess dough with a knife.
  • Press the edges of the dough together.
  • Crack the egg in a small bowl and whisk.
  • Bake the pumpkin pie for about 40-50 minutes at 190 ° C.
