Minced meat casserole with rice, mushrooms and zucchini is not only very tasty, but also very filling. Lightly fried meat, juicy vegetables and mushrooms become very tender after topping with sour cream and cheese. This delicious casserole is wonderful for both lunch and dinner.

Ingredients
  

  • 120-150 g rice
  • 1-2 tbsp vegetable + something to coat
  • 450 g beef ground
  • 2 zucchini medium size
  • 200-250 g mushrooms
  • 150-180 g cheese
  • 450 g sour cream
  • chili ground, to taste
  • 1 tsp salt

Instructions
 

  • Place rice in a saucepan and cook for about 20 minutes.
  • Remove from heat, drain and let cool.
  • Meanwhile, heat oil in a frying pan over medium heat.
  • Add ground meat and fry in it for about 4-5 minutes.
  • Stir well so that no large pieces remain.
  • Cut zucchini and mushrooms into small to medium sized pieces.
  • Also add to the pan and cook the whole thing together for another 5-7 minutes.
  • Then remove from heat and let cool slightly.
  • Coarsely grate the cheese.
  • Mix with rice, sour cream, chili and salt.
  • Add minced meat, mix again.
  • Coat casserole dish with oil and pour in mixture.
  • Put the casserole in the preheated oven and bake at 180°C for about 20 minutes.
  • Remove minced meat casserole from oven and serve hot.

Notes

If zucchini are very young, they can be prepared with the skin. Very ripe vegetables should rather be peeled. To get a delicious crust, half of the grated cheese can be set aside and sprinkled over the casserole before baking.
