Eggplants are baked in sour cream sauce and fried onions under a delicious cheese crust. The dish is served directly in oven dishes, which not only looks beautiful but also stays warm for a long time.

  • 500-550 g eggplants
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 onion
  • Black pepper to taste
  • 150-180 ml sour cream
  • 100 g cheese


  • Peel eggplant and cut into small pieces.
  • Put them in a bowl, salt, stir and let stand for 20 minutes.
  • Then rinse under running water and squeeze carefully.
  • Peel and chop the onion.
  • Heat oil in a frying pan over medium heat.
  • Sauté the onion in it for 4-5 minutes.
  • Add the eggplant and cook for another 4-5 minutes.
  • Salt and pepper the vegetables and mix with the sour cream.
  • Cover and simmer over medium heat for 15-20 minutes.
  • Remove pan from heat and divide vegetables into small oven ramekins.
  • Sprinkle grated cheese on top.
  • Bake in preheated oven at 180 °C for 10-12 minutes.
  • Serve the eggplants directly in oven dishes.
