The soft and airy white pastry is a French breakfast classic made of yeast dough. Brioche yeast plait with almond flakes is very easy to bake yourself and it tastes delicious.

Ingredients
  

  • 500 g flour
  • 70 g sugar
  • 75 ml milk
  • 4 eggs
  • 1/2 cube fresh yeast
  • 1 tsp salt
  • 200 g butter soft
  • 1 egg to coat
  • flaked almonds to taste
  • Hail sugar to taste

Instructions
 

  • Knead flour, sugar, milk, eggs and yeast with food processor for 5 minutes.
  • Add salt and knead for another 10 minutes.
  • Cut the butter into pieces and add to the dough.
  • Knead the dough for another 10 minutes.
  • Let the dough rise, covered, for about 2 hours.
  • Knead the dough once and let it rise overnight, covered, in the refrigerator.
  • Shape the brioche as desired, e.g., braid into a pigtail.
  • Let the braid rise for about 2 hours.
  • Before baking, brush the brioche with beaten egg yolk.
  • If desired, sprinkle with hail sugar or almond flakes.
  • Bake the brioche at 180 °C for about 30-40 minutes.
  • Brioche yeast plait can be enjoyed lukewarm.

Notes

To prevent the brioche from getting too dark while baking, the braid can be covered if necessary.
