Lamingtons in chocolate icing are a typical Australian pastry, which translates as "sponge cake". For the lamingtons, a rectangular sponge cake base is first baked and cut into small cubes. These are dipped in chocolate icing and coated with shredded coconut. The Australian lamingtons are very soft, juicy and taste incredibly good, while the preparation is not difficult at all.

  • 200 g butter +something for greasing
  • 185 g flour
  • 40 g cornstarch
  • 2 tsp baking powder
  • 230 g sugar
  • 2 tsp vanilla extract
  • 3 eggs
  • 125 ml milk


  • 200 g dark chocolate
  • 1 tablespoon butter
  • 500 g powdered sugar
  • 140 ml milk
  • 300 g coconut flakes for sprinkling


Prepare the dough

  • Preheat oven to 180°C top/bottom heat.
  • Grease a rectangular baking pan with butter.
  • Sift flour and baking powder into a bowl.
  • Mix with starch.
  • In another bowl, beat butter and sugar with mixer until light and creamy.
  • Add eggs one at a time and continue beating.
  • Beat in vanilla extract.
  • Add flour mixture and milk in batches and mix gently with a kitchen spatula.
  • Transfer the batter to the baking pan and smooth it out with the spatula.
  • Bake the sponge cake base in the preheated oven for about 30-35 minutes.
  • Carefully turn out the sponge cake base onto a cooling rack and let it cool.
  • Then cut into small cubes of the same size.

Prepare the glaze

  • Break chocolate into pieces and place in a bowl.
  • Add butter, melt in a double boiler, stirring, in about 3-5 minutes.
  • Add powdered sugar and warm milk and heat for another 2-3 minutes, stirring constantly, until the glaze has an even consistency.
  • Leave the bowl with the glaze in a water bath at minimal temperature.
  • Fill a plate with coconut flakes.
  • Dip the sponge cubes into the glaze with the help of a fork.
  • Then roll in coconut flakes on all sides.
  • Place lamingtons on a cake rack and let dry for about 25-30 minutes.


It is best to use a serrated knife to cut the sponge.
After cutting, brush the sponge cubes with a pastry brush to remove any remaining crumbs.
The Australian lamingtons can be prepared 2-3 days before eating. Just be sure to store them in an airtight container.
