Ingredients

  • 3 m natural casing
  • 2 kg chicken legs
  • 4-5 cloves garlic
  • 2 tsp salt
  • black pepper, to taste
  • 3 tsp mustard
  • Turmeric, to taste
  • Poultry seasoning, to taste
  • 300-400 ml water

Instructions

  1. Rinse sausage casing well, place in a bowl and soak in water for 30-60 minutes, following manufacturer’s instructions for this.
  2. Remove chicken meat from bones and skin.
  3. Cut into medium sized pieces.
  4. Put skin and fat contained in it through a meat grinder.
  5. Press garlic through a press.
  6. Place chicken pieces, skin and garlic in a bowl.
  7. Add salt, pepper, mustard, turmeric and other spices.
  8. Mix the whole thing well.
  9. Pour 150 ml of water and mix well again.
  10. Put sausage attachment on meat grinder and fill sausage casing with the mixture.
  11. Cover the baking tray with aluminum foil.
  12. Put the sausage on it and prick it from one side with the needle.
  13. Put some water on the baking tray.
  14. Bake at 180 ° C for about 1 hour.
  15. Afterwards, pour off liquid from the baking tray.
  16. Turn the sausages over and pierce again with a needle.
  17. Bake the sausages in the oven for another 20 – 25 minutes and then serve with a salad.
