Pasta with Brussels sprouts, white wine and bacon

is based on the crunchy, chopped Brussels sprouts, pan-fried and combined with salty, crispy bacon and fine Parmesan. Add to that a big splash of white wine and some of the pasta water for the sauce. The whole thing is seasoned with the dried chili and mixed with al dente pasta. The dish is quite simple and takes only 20-25 minutes to prepare, tastes great and is perfect for a tasty dinner.

  • 5-6 slices bacon
  • 450 g Brussels sprouts
  • 5 garlic cloves
  • 60 ml white wine dry
  • 450 g spaghetti
  • salt to taste
  • 3 tablespoons olive oil
  • chili pepper dried to taste
  • 45 g parmesan


  • Cut bacon into small pieces.
  • Clean Brussels sprouts, wash and cut into 4 pieces.
  • Peel and finely chop the garlic.
  • Heat a frying pan without fat.
  • Fry bacon in it for about 5-6 minutes until crispy.
  • Remove and drain on paper towels.
  • Leave half of the frying fat in the pan.
  • Sauté the Brussels sprouts in it for about 5 minutes.
  • Deglaze with white wine.
  • Reduce heat and sauté Brussels sprouts for about 5 more minutes until wine has completely evaporated.
  • Remove the cabbage from the pan and place on the plate with the bacon.
  • In a large saucepan, bring enough salted water to a boil.
  • Add spaghetti to the boiling water and cook until al dente, 7-9 minutes.
  • Using a measuring cup, skim off about 200 ml of the cooking water and set aside.
  • Drain the spaghetti using a strainer and leave to drain.
  • In the same pan, heat 2 tablespoons of olive oil.
  • Sauté the garlic in it for about 3-5 minutes until golden.
  • Deglaze with the pasta water.
  • Add bacon, Brussels sprouts and grated Parmesan to the pan, season with chili.
  • Add spaghetti, mix everything well and toss.
  • Arrange spaghetti on a large flat plate, drizzle with remaining oil.
  • Garnish pasta with freshly plucked basil and lemon slices and serve immediately.
